Truffle growing in Western Australia is taking off, with restaurateur and truffle consultant Alain Fabregues saying that the level of production is now the highest outside the traditional truffle growing areas such as France, Spain and Italy. "So far no one else in Australia has achieved this," he said. "They have tried in Tasmania and failed. No one in the US or New Zealand has been able to do this, this is really very special and I don't think people grasp how big this is," he said. This year the crop is expected to come in between 600kg and one tonne after starting with a single truffle in 2003. Worldwide production of the fungus only totals an average of 50 tonnes each year and they can fetch up to $3,000 per kilogram.
