Waygu breeders profit from niche beef

Niche beef primed for select markets earns prices well above average. One farmer from Mickleham in southern Victoria receives $115 a kilogram wholesale for beef from a select herd of Waygu cattle, a breed that Japan will no longer allow to be exported. The cattle are moved from the paddock to a feedlot at age 15 months, and spend another 18 months in a feedlot eating a special formula that ensures slow growth and the development of the highly marbled beef that stores the fat within the meat.
