Senate finds mutton dressed as lamb

Substitution of mutton for lamb is a legitimate concern but not widespread in the Australian meat industry says a report from the Senate Rural and Regional Affairs and Transport committee. The committee found that "rogues" and inexperienced meat workers in some abattoirs were to blame. The committee recommended that the commonwealth and states investigate adopting the Western Australian regulatory system where sheep are checked by inspectors to ensure they have been mouthed before slaughter. WA also has strict sanctions regime under which some operators have been jailed.
